French Onion Soup

I've always loved French Onion Soup, but I can never find a canned vegetarian version! Hope you enjoy!




Time needed: about an hour




Ingredients:


2 tablespoons of olive oil

6 large Bermuda onions, sliced

1 garlic clove, minced

1 teaspoon sugar

3 tablespoons of flour

14.5 ounce can of vegetable broth

2 cups of dry red wine

0.5 teaspoon of salt

0.5 teaspoon pepper


1: In a large flameproof casserole, heat oil over a medium heat. Add onions and cook, while stirring until soft (5-7 minutes). Add the garlic and sugar. Continue to cook, stirring often, until the onions turn an amber color (20-25 minutes). Stir in flour to coat onions and cook, stirring (2-3 minutes).



2: Gradually add the broth, stirring constantly to prevent any lumps from forming. Bring to a boil, stirring occasionally, until the soup thickens (5-7 minutes). Add the wine, salt, and pepper. Cover and reduce heat to low. Let simmer for 5 minutes.
